Offers Unique Freetail Beer Dinner Wednesday, July 20th
“Wild game and brews all around!” No, this is not the request of a medieval king, but rather an invitation to grab your friends and enjoy the flavors of the Texas Hill Country for a more “modern twist” to feasting like royalty with an evening of exquisite cuisine paired with unique brews at Antlers Lodge, Wednesday, July 20th. Featuring a selection from San Antonio’s Freetail Brewing Company, the evening includes a five-course dinner with beer parings.

Chef Armando Diaz, Chef de Cuisine of Antlers Lodge, has crafted a dinner menu of pairings that features a wide-range of Texas flavors, including Gulf Seafood Terrine, Heirloom Tomato, Corned Pork Jowl, fresh Cobia with antelope jerky and Dorper Lamb Loin, giving diners the opportunity to experience a bevy of Texas’ natural bounty alongside the bold flavors of Freetail’s handcrafted beers. Chef Diaz and a representative from Freetail will discuss each course and its pairing, walking guests through the selections. A meet and greet will begin at 6:30 p.m., followed by dinner at 7:00 p.m. The dinner is $65 per person. Tax and 18 percent gratuity are not included in the dinner pricing.
A San Antonio-based brewery, Freetail is noted for producing superb beer, focusing on unique mixtures using only the freshest ingredients of barley, wheat, oats, fruits and flowers. An economic teacher turned brewer, CEO Scott Metzger drew his inspiration and company name from the Mexican free-tailed bat. Though tiny, this flying creature has a huge impact on its community, and the team at Freetail commits itself to doing the same. From its humble beginnings inside of a used 15-barrel brewhouse to a 30,000 square foot full production brewery, determination and an open-mind has led this company to be recognized as one of the top brewpubs in Texas.
Freetail revels in the opportunity to experiment with distinct flavors, and its unique blends are the perfect match for Antlers, the signature restaurant at Hyatt Regency Hill Country Resort and Spa that features locally harvested ingredients and ranch-inspired cuisine with a focus on exotic prime cuts and game. Nestled on the site of the historic Rogers Wiseman Ranch and serving locally sourced ingredients respecting the Texas Hill Country’s cultural influences, Antlers is known for its fantastic customer service, unforgettable flavors and unique location providing terrific views of the resort’s scenic, award-winning golf course and Hill Country surroundings. The AAA-Four Star restaurant received OpenTable’s “Diners’ Choice Award” 2015 and has been the recipient of the Wine Spectator Award of Excellence every year since 2012.
The evening features a lineup of five brews from Freetail’s diverse selection. Yo Soy Un Berliner, a seasonal selection with a light modern twist on a centuries-old classic packed with deliciously tart flavors, will be the first to refresh your thirst. Rye Wit, full of citrus candy notes and mellow bready malt undertones topped with an effervescent billowy foam cap is sure to delight your taste buds alongside the second course. Third to pour out will be the deep auburn Old Bat Rastard, a limited edition featuring deep aromas of earthy bitterness and nutty flavors touched with hints of prune and dried fig.
Accompanying the fourth course will be a reserve beer, Despertado en Manzanilla, a wild ale that begins with an oaky taste, followed by a combination of tart stone fruit apricot and lime notes smoothed over by herbal undertones of chamomile. To finish the evening, a perfect balance of richness and ruggedness, Soul Doubt IPA boasts loads of citrus and woody flavors that are sure to make your senses sore into a starry-eyed night.
